After more than 20 years as head chef at Longueville Manor in Jersey, Andrew Baird has produced his first cook book, Recipes from the Sea. In an attractive and practical way, the chef presents 80 simple fish recipes, all easy to execute for healthy and delicious dinner parties and the family table.

‘This is not a coffee table book,’ says Baird. ‘It is intended for everyday use and should be in the kitchen getting dirty.’ Culinary genius Michel Roux Snr OBE has endorsed the book and says of Andrew ‘his experience with fish is second to none’.

The small island of Jersey is steeped in fishing heritage, and supplies high-quality produce in abundance. Local characters and local flavours have been Baird’s inspiration for the book. Ingredients are widely available in good supermarkets and fishmongers, and the range of dishes includes simple family favourites and splendid dinner party creations.

With the home cook in mind, Andrew has adapted professional recipes that have delighted diners at Longueville Manor – the only Relais & Châteaux property on the island - for more than 20 years.
