Choccy Philly Strawberry Pancakes

12th February 2013 provides the perfect excuse to go Choccy crazy!

With Pancake Day just around the corner, it’s time to start thinking about your flavour of choice and we’ve got something guaranteed to hit the sweet spot. Mix strawberries with Philadelphia with Cadbury for an ever-so-tempting treat, or flip a variety with these tasty recipes from Philadelphia, the UK’s number one cream cheese. Only one day of the year is assigned to such a delicious kitchen treat, so make it count and give new ideas a go... on a day like this, there’s no need to limit them to just dessert!

Choccy Philly Strawberry Pancakes

Chocolate Temptation – a tempting mix of creamy Philadelphia with Cadbury and strawberries, a sure fire hit this Pancake Day

Serves 8

Ingredients
110 g plain flour
2 medium free range eggs
300 ml semi-skimmed milk
2 tbsp olive oil
180 g strawberries chopped in half to serve
120 g Philadelphia with Cadbury

Instructions

Whisk together the plain flour, eggs and milk. Let the mixture rest for 30 minutes, or up to 1 hour if you have time.

Heat 1 tablespoon olive oil in a shallow frying pan, then pour in 2 tablespoons of the mixture and swirl so it spreads to the edges. Cook for 1 minute before flipping over and cooking on the opposite side for another minute, then remove from the pan.

Repeat until all the mixture is used up.

Spread each pancake with approximately 15g Philadelphia with Cadbury. Divide the strawberries between the pancakes and fold them over.

Fruity Pancakes

Fruity Little Number - mixing Philadelphia Light with pears and berries for a low calorie treat

Serves 6

Ingredients
150 g Philadelphia Light, softened
1 tbsp icing sugar, to sweeten
400 g tinned pear slices (in juice), drained
150 g mixed frozen berries, defrosted
6 plain pancakes
ground cinnamon or icing sugar, to dust

Instructions

Mix together the Philly and icing sugar. Place the berries and pear slices in separate pans and heat gently until warmed through.

Heat the pancakes (as directed on the pack) and fold in half and then in half again to form triangles.

Fill with the Philly mixture and top with the warm pear and berries. Place on a serving plate and dust with a little ground cinnamon or icing sugar to serve.

Philadelphia with Vegetable Pancakes

Make a Meal of it - adding fresh spring vegetables, with Philadelphia and Chives, to make a proper family meal of the occasion

Serves 4

Ingredients
350 g (12 oz) mixed vegetables eg baby corn, baby carrots, mange touts, french beans
150 g (6 oz) Philadelphia Light with Chives
3 tbsp semi-skimmed milk
black pepper
8 ready made pancakes
a little salad

Instructions

Cut the vegetables into even bite-sized pieces and microwave or steam for 5-8 minutes until tender.

Heat the Philadelphia with the milk but do not boil, then combine with the cooked vegetables and black pepper.

Warm the pancakes according to the instructions on pack, fill with the vegetable mixture and serve with the salad.
