New Japanese restaurant to open at Finca Cortesin in Marbella

Finca Cortesin, Spain has announced the launch of its signature Japanese restaurant Kabuki Raw, opening on 26 March 2013.
 
Kabuki Raw is led by Head Chef Rafael Carrasco and managed by the Kabuki Group, a world leader in Japanese cuisine with five restaurants, totalling three Michelin stars.

Rafael has over 10 years experience, and is an apprentice of the renowned Chef Ricardo Sanz. Prior to his arrival at the hotel, Rafael worked at Michelin star restaurants Abama Kabuki, Martin Berasategui and Arzak. Rafael also travelled to Japan to learn from three Michelin star maestro Seiji Yamamoto, and to Australia to train with Michelin star chefs Tesuya Wakuda and Neil Perry.
 
Kabuki Raw, like the Japanese theatre after which it is named, is staged in a spectacular setting which allows guests to view Rafael at work in the Kabuki Raw kitchen.
 
The Kabuki Group is renowned for its pure, traditional Japanese dishes that sit alongside dishes emerging as a result of Mediterranean influences. It is the use of top quality, fresh produce, together with the simplicity and natural state in which the food is served that makes Kabuki Raw distinctive. Only the finest raw materials are selected, with the sustainable seafood sourced directly from mostly local fisheries, and the organic produce chosen from Finca Cortesin’s own vegetable garden.
 
Kabuki Raw joins El Jardín de Lutz, led by Chef Lutz Bösing and serving authentic Spanish cuisine, and Don Giovanni, Finca Cortesin’s fine dining Italian restaurant led by Chef Andrea Tumbarello. In addition, The Blue Bar serves Spanish tapas and the Beach Club offers Mediterranean cuisine by the pool.
