SWISS serves up inflight delights from Lucerne

Swiss International Air Lines has turned to the Lucerne region for the latest chapter in its “SWISS Taste of Switzerland” inflight culinary programme.

Johan Breedijk, chef de cuisine at the Art Deco Hotel Montana, has created a range of tasty meals that will be served to SWISS First and Business Class guests aloft from today and for the next three months.

SWISS customers travelling in First and Business Class on intercontinental services from Switzerland (and on selected inbound flights) will be enjoying specially-created culinary delights from the Lucerne region over the next three months. The new meals, which are introduced today, will also be served to Business Class travellers on longer outbound European flights. 

The Mediterranean-inspired creations of Johan Breedijk, the 15-GaultMillau-point chef de cuisine at the Art Deco Hotel Montana in Lucerne, are hallmarked by their use of seasonal ingredients and fresh spices and herbs. SWISS Business customers will enjoy such delicious starters as roast beef with mango and chilli chutney, rocket, Parmesan shavings and pesto vinaigrette; and for their main course Johan Breedijk offers delights such as grilled brook trout with mascarpone sauce, wasabi and vegetable risotto and spinach.

For SWISS First travellers, the inflight highlights include scallop and ratatouille with watercress panna cotta, followed by such main-course delights as veal steak with basil and passion fruit crust, veal jus and fregola pasta risotto. The gourmet experience is rounded off with such treats as white chocolate semifreddo with marinated strawberries and pistachios in First Class, or amarena cherry and hazelnut mousse with strawberry compote and sweet basil pesto in Business.

The Art Deco Hotel Montana in Lucerne is the 28th stop on SWISS’s current tour of the country’s leading kitchens under its “SWISS Taste of Switzerland” culinary concept. The programme was launched in 2002, and has already earned the inflight catering industry’s Mercury Award for its innovative approach.
