A taste of the Rocky Mountains in London Rocky Mountain Cuisine is relatively new in the UK, but is now enticing visitors to Alberta’s mountain resorts and cosmopolitan cities. Travel Alberta has announced the pioneer of Rocky Mountain Cuisine, Executive chef Alistair Barnes of Rocky Mountain Resorts is visiting London to promote his new book Simple Treasures and will be in the capital between 8th – 11th March 2008.

Alistair has spent nearly two decades developing recipes that showcase the very best of Western Canadian cuisine. The philosophy behind Rocky Mountain Cuisine is to use fresh, local ingredients to produce dishes with an authentic taste of the Rockies, these include regional produce such as vegetables, fruits, grains, fish and meats such as buffalo and elk.

Well known as a destination for adventure seekers and Wintersports enthusiasts the dishes are set to satisfy hungry appetites as well as gratify the palate.

Chef Alistair Barnes oversees each Canadian Rocky Mountain Resort (CRMR) kitchen and works with Head Chefs at every property to build dishes that will inspire home cooks, but will also be accessible to them. Beautifully photographed, in full colour, the cookbook is a fascinating biography of Canadian Rocky Mountain Resorts, and explores the history, concept and atmosphere of each lodge and restaurant.

Every CRMR property is a lovingly restored heritage building, maintaining its original charm with added modern luxuries. This commitment to respecting the past while evolving for the future is demonstrated in the recipes in Simple Treasures. From the ‘Bow River Trout Fillet with Citrus Herb Sauce’ to the ‘Roast Elk Tenderloin, Squash Hash & Wild Rose Game Reduction,’ the flavors are regional and authentic.
