Raspberry lemonade – deliciously simple!

Raspberry Lemonade

From July we can all start to enjoy British raspberries at their very best.
 
One of the most popular berries, raspberries can be enjoyed straight from the punnet and are the perfect low fat snack.
 
Raspberries are great at increasing energy levels because of their high levels of natural sugars, so why not wake yourself up and enjoy a handful of British raspberries this summer.
 
They can be enjoyed in picnics, packed lunches and scrumptious deserts. So why not mix things up (literally!) with deliciously simple mouthwatering recipe from Waitrose.com.
 
Fresh Raspberry Lemonade
Makes: 4 x 250ml

Ingredients:

450g raspberries
50g caster sugar
3 unwaxed lemons
1 litre chilled soda water
Mint leaves

Method:

1. Toss 450g raspberries in a bowl with 50g caster sugar and leave for 1 hour. Blitz in a food processor, then push the purée through a sieve and discard the pips.

2. Mix the purée with the finely grated zest and juice of 3 unwaxed lemons and 1 litre chilled soda water. Taste and add extra sugar, if required. Serve in chilled glasses over ice and decorate with mint leaves.
