SWISS offers wintery culinary delights from the Dolder Grand

SWISS is treating passengers to menu creations by Heiko Nieder, Chef Fine Dining at The Restaurant in Dolder Grand, as part of its culinary concept, SWISS Taste of Switzerland.

Passengers travelling in SWISS First or SWISS Business on intercontinental flights from Switzerland and on selected flights to Switzerland can look forward to savouring delicious dishes from the Dolder Grand – the jewel of Zurich’s hotels that re-opened in April 2008. Special creations from Nieder’s kitchen will also be served to Business Class passengers on longer flights within Europe.

Heiko Nieder was named “Discovery of the Year” in 2003. He earned a Michelin star for The Restaurant in 2008. During his guest appearance with SWISS the 35-year-old German chef will present youthful, experimental cuisine. Christof Beckmann, Chief Marketing Officer at SWISS, expressed his enthusiasm for the new cycle at the menu presentation at The Dolder Grand: “Our guests can look forward to another culinary highlight: Heiko Nieder represents top contemporary cooking with the accent on high quality - a perfect match for SWISS.”

As an appetiser, for example, passengers in SWISS First will be served trout with watercress and celery, followed by a first course of scallops with cauliflower, ginger and star aniseed. The main course stars a duo of beef with potato mousseline, endives, Gruyère cheese and fig coffee. Crowning this lavish meal is a dessert of spiced chocolate with sweet corn ice cream and coriander.

Passengers in SWISS Business will be served a veal steak with carrots, black cumin and polenta cubes. For dessert, passengers can look forward to apple jelly with cardamom biscuit, yoghurt and cold pressed grape-seed oil.

Wine lovers will again be spoilt for choice over the coming three months: In SWISS First, for example, a Winterthur Pinot Noir will be served. New on the wine card is a Hungarian Tokaji Furmint – a dry white wine with a convincing aromatic bouquet from the vineyards of wine master Hugh Johnson. In SWISS Business a fine white and red wine from guest region Zurich are accompanied by an outstanding TRE from the Brancaia house of wines.

Introduced by SWISS in 2002, SWISS Taste of Switzerland is a winner of the Mercury Award. The Dolder Grand Restaurant is the 23rd station on this culinary journey through Switzerland’s leading kitchens.
