Roux scholar joins Montagu Arms It is an exciting day for Montagu Arms in Beaulieu as Michelin-starred chef Matthew Tomkinson joins forces with the rest of the team. Tomkinson, who won the Roux scholarship in 2005, has been made Head Chef at the Montagu Arms hotel, managing ‘The Terrace’ the hotel’s two rosette, fine-dining restaurant and ‘Monty’s’ a modern gastro-pub with delicious fare.

Matthew said he chose the Montagu Arms as their green philosophy and beautiful surroundings were a propelling force for his gastronomic aspirations.

His favorite culinary time of year, is when the seasons change, working the first fresh-picked strawberries and asparagus, or when game venison comes into season. The New Forest is ideal location for this and hopes to build on The Montagu Arms’ reputation for using seasonal ingredients, which are locally sourced, free-range and organic wherever possible.

He is already discussing changes for the Montagu including a new Menu, and growing their own vegetable garden.

Tomkinson fans look on, with eager anticipation.
