19th August 2010 Print

Pennyhill Park Hotel and The Spa is delighted to announce that ‘The Bakery’ will open this October. Producing bread using its very own filtered bore hole water and a large selection of organic buckwheat, chestnut and rye flours The Bakery will provide the hotel with a vast array of breads and patisserie including sourdough, ciabatta and foccacia which will be available for afternoon tea and light snacks.

Built with a large glass viewing panel guests at Pennyhill Park Hotel will be able to watch head pastry chef, Denis Drame (Pierre Hermé and Le Manoir aux Quat’Saisons) and his team busy at work.  Denis recently won The Tea Guild’s Award of Excellence 2010 which is the equivalent of a Michelin star for afternoon tea. Denis will be welcoming the talents of new Head Baker, Stephane Gliniewicz, who trained under Christophe Michalak at Plaza Athenée in Paris and was more recently Senior Baker at The Connaught, London.

As an extra service residents of the hotel will be able to pre-order their baked goods before they leave by filling in an order form designed to hang on their door handle...their order will be waiting for them upon check out.  Visitors to the hotel will also be able to buy goods from The Bakery at the hotel reception or in the Themis Restaurant.

Pennyhill Park Hotel General Manager Julian Tomlin commented, “the development of The Bakery here at Pennyhill shows our true dedication to home cooked produce and to food miles. In my mind there’s nothing worse than bread or pastries delivered by a supplier which we can’t guarantee is baked literally just before the customer takes a bite! We are constantly striving to find innovative ways to enhance our guest experience and so to be able to provide a variety of freshly baked produce, baked right here on site on a daily basis, I believe adds an extra special touch”.

The Bakery will also be available to conference delegates and for baking master classes for numbers up to eight people. Classes will last 90 minutes and will cost £70pp which includes tuition, recipes, bread sample and your very own Pennyhill Park Hotel Bakery apron.
