A Fruity Recipe Idea For Shrove Tuesday

Fruisana Pancakes Shrove Tuesday (February 20) is the perfect opportunity to experiment with some fruity new pancake recipes! Fruisana Fruit Sugar has devised a delicious, easy-to-prepare, Buttermilk Pancake batter which can form the base for either sweet or savoury toppings……or both!

For those of you with plans for the morning, the pancakes will make a delicious lunch or supper dish later in the day.

Fruit sugar enhances flavours – particularly of fruits or herbs and spices - and is better for you than conventional sugar. It is doubly healthy as it is sweeter than ordinary sugar so you need use up to one third less to achieve the same sweetness, and it has a low GI* - only 19 - so releases energy slowly, helping maintain a healthy energy balance without peaks and troughs. It is ideal for all those who follow a low GI diet, including Type 2 diabetics.

So, it’s quite simple, just leave this article in a prominent place and make sure that you buy some buttermilk from the supermarket so that it is ready and waiting in the fridge!

Buttermilk Pancakes

175g plain flour, sieved
Pinch of salt
1 tbsp Fruisana Fruit Sugar
1 tsp baking powder
2 medium eggs
284 ml tub buttermilk

1. Place the flour and salt in a large mixing bowl and then make a well in the centre.
2. Beat the eggs and stir into the flour, gradually add the buttermilk until all the flour is combined.
3. Beat well until the mixture has the consistency of thick cream.
4. Place in the fridge to allow the flour particles to thicken the mixture.
5. Beat well before using.


To cook each pancake
1. Heat a small amount of cooking oil in a small frying pan. When the oil is hot, add about 5 tbsp of the batter mixture into the pan.
2. Allow to cook on the first side until golden and bubbles appear on the top surface.
3. Turn over and cook again until golden.
4. Turn onto greaseproof paper, layering greaseproof paper between each pancake and cover with a clean tea towel to keep warm until required.

Ideas for serving:

Sweet Pancakes
Whip 150ml double cream until stiff, stir in the grated rind of an orange and 1 tsp cinnamon. Slice 1 banana and place in the centre of each pancake, add the cream and roll up.

Savoury Pancake
Grill or fry 3 rashers of bacon for each pancake. Chop and fry 2 tomatoes and 50g mushrooms in 15g butter then stir in ½ tsp English mustard and coat thoroughly. Place the bacon, tomatoes and mushroom in the pancake and roll up.

Easy Option
Squeeze the juice from 3 oranges, stir in 1 tsp of Fruisana and serve with the pancakes, delicious!
