Al Fresco Or Indoor Recipes From Fruisana

Lamb Patties The problem with the “Great British Summer” is that we never know quite when it will begin. Sometimes we can find ourselves eating “al fresco” in the garden by Easter, while in other years we have to wait until the second May bank holiday or even later for the clement weather.

When planning to entertain at this time of year it is sensible to cover your options, and here, from Fruisana Fruit Sugar, is the perfect meal: It can be cooked and served indoors or outdoors - and the Spicy Lamb Patties are perfect for the barbecue.

You will find that by using Fruisana Fruit Sugar in the recipes, the flavours are enhanced – the lemon and herbs in the Tabouleh are brought to life by the addition of fruit sugar instead of ordinary sugar (sucrose). Our third recipe is Pear, Apple and Red Cabbage Salad – deliciously fruity, crisp and very colourful, with a great combination of textures and a really tasty dressing.

SPICY LAMB PATTIES
450g lean lamb mince
1 small onion, peeled and finely chopped
1 small eating apple, peeled and grated
1 tsp ground cumin
2 tbsp sweet chilli sauce
1 tbsp Fruisana Fruit Sugar
1 large egg, beaten
50g fresh wholemeal breadcrumbs
1 tsp salt
Freshly ground black pepper
3 tbsp vegetable oil

1. Place the lamb in a mixing bowl.
2. In another bowl mix together the onion, apple, cumin, chilli sauce, Fruisana, egg, breadcrumbs and seasoning.
3. Stir the onion mixture into the lamb and mix together thoroughly.
4. Shape the mixture into 6-8 patties.
4. Brush both sides of the burgers with the oil and grill or barbeque for 5 to 7 minutes on each side, depending on how thick you make the burgers.
5. Serve with the pear, apple and red cabbage salad and tabouleh.

TABOULEH
This is a variation of a traditional salad from the Middle East
225g bulgar wheat
1 tsp salt
1 yellow pepper, seeded and diced
450ml boiling water
450g tomatoes, chopped
½ cucumber, diced
6 spring onions, chopped
50g walnuts, finely chopped

Dressing
6 tbsp olive oil
1 tbsp Fruisana Fruit Sugar
4 tbsp lemon juice
2 tbsp fresh mint, chopped
2 tbsp fresh parsley, chopped
2 cloves of garlic peeled and crushed

1. In a large bowl mix the bulgar wheat and salt and then pour over the boiling water and leave for 15 minutes. Drain to remove any excess water.
2. Add the prepared yellow pepper, tomatoes, cucumber, spring onions and mix well.
3. Blend together the dressing ingredients and pour over the salad. Mix thoroughly and chill until required.

PEAR, APPLE AND RED CABBAGE SALAD
40g Fruisana Fruit Sugar
4 tbsp cold water
3 tbsp raspberry wine vinegar
4 tbsp olive oil
Salt and pepper
225g red cabbage, finely sliced
1 red onion, peeled and sliced thinly
2 pears, quartered, cored and thinly sliced
2 Cox’s apples peeled, cored and thinly slice

1. To make the dressing:- Put the Fruisana and water into a saucepan, melt on a gentle heat then use a fast heat to boil without stirring until deep golden. Take off the heat and cool for 5 minutes.
2. Add the vinegar then return to a low heat and stir until smooth. Cool, then whisk in the oil and seasoning.
3. In a large bowl, mix the cabbage, onion, pears and apples. Pour over the dressing. Toss together until well coated.
