The ultimate cheese on toast! Love cheese on toast? The nation’s most satisfying snack is about to get even better thanks to restaurateur and celebrity chef Brian Turner, who has revealed his secret for creating the ‘Ultimate Cheese on Toast’. Brian uses sour dough bread, a delicious, tastier alternative to the usual loaf to create his ‘Ultimate Cheese on Toast’. He believes the best result is achieved by only toasting the bread on one side. Brian’s definitive choice of toppings is Cathedral City Sliced, piccalilli and horseradish.

By chopping and spreading the vegetables from the piccalilli, Brian believes you can get the perfect taste and texture. The horseradish gives the dish an extra kick, to complement the smooth, mellow flavour for which Cathedral City is renowned.

BRIAN TURNER’S ULTIMATE CHEESE ON TOAST RECIPE
(Serves 4)

INGREDIENTS

4 slices sour dough bread
6 slices of Cathedral City Sliced
2 tbsp piccalilli
1tsp horseradish
50g butter

METHOD

1. Slice the bread
2. Toast lightly on one side
3. Take out from the grill and turn the bread over
4. Take the vegetables from the piccalilli and chop finely
5. Mix this with the sauce from the piccalilli and add the horseradish
6. Butter lightly to the edges on the un-toasted side
7. Spread the piccalilli mixture on the bread
8. Lay the cheese on top
9. Grill to melt, slice in half and serve
