Booths launches the ‘caviar of beans’
Flageolet Beans, often referred to as the ‘caviar of beans’ for their superiority and quality are now on sale exclusively at Booths. Unlike imported Flageolet Beans from Italy, which are dehydrated and preserved, these frozen beans are grown by Yorkshire producer, Scholes, and fast frozen to preserve their quality and taste.Combining the convenience of tinned beans with all the benefits and taste of the fresh produce, this is an exciting new product and Booths is delighted to be the first UK food store to stock them.
The harvesting of the Flageolet is a very specialist operation, which only takes place in the late summer when the condition of the Flageolet is exactly right. At this point the beans are harvested quickly to keep them in their prime tender condition using special bean harvesters, designed to handle the precious Flageolet very carefully. The beans are shelled from the pod and then transported to be frozen within two hours of being picked.
Flageolet Beans are very popular with chefs and unlike many other beans, hold their shape well during cooking, have a delicate flavour and are creamy and dense in texture. They are also a great vehicle for other flavours, soaking up meaty stocks and sauces, and perfect in stews, cassoulets and braises. Flageolet Beans are also extremely nutritious - full of fibre and an excellent source of protein.
