Cookery classes at Cap Maison

Luxury boutique hideaway, Cap Maison, is now offering cookery classes and a tisane trail at their beautiful family-run property located on the North-Western tip of St Lucia.
The classes will inspire guests to fully appreciate the colourful variety and quality of St Lucian produce.
New Cooking Classes
The sessions will be led by the team at Cap Maison's restaurant, The Cliff at Cap every Saturday morning. The classes start with a visit to nearby Castries market with Sous Chef Nico to source fresh, local ingredients. The market is home to a vast array of quality St Lucian produce from seasonal vegetables and fruit, such as plantain and dashene to seafood including Red Snapper and Mahi Mahi. These ingredients are then taken back to the hotel to prepare authentic West Indian dishes at Cap Maison's principle kitchen under the supervision of head chef Craig Jones.
As a St Lucian Chef of the Year and Executive Chef at the hotel's Cliff at Cap restaurant, Craig Jones is an expert in the art of West-Indian cooking. Craig is also classically trained resulting in the creation of Caribbean dishes with a French influence. The Cliff at Cap has quickly become one of the island's most popular restaurants. True to the island's heritage, Craig serves a French-West Indian inspired contemporary menu based on fresh local produce and seafood. The restaurant boasts a dramatic location on the cliffs' edge, while multi-level decks and seating areas provide unobstructed views of the Caribbean Sea and across to Martinique.
Step-by-step Craig will take students through his specially designed menu teaching the importance of certain ingredients, techniques and styles within West Indian cooking. The dishes created within the class will then form part of a delicious lunch which will be served to all students in the stunning Cliff at Cap restaurant . Full recipes are provided at the end of the course with the aim to inspire students to use their newly found cookery skills to recreate the West-Indian dishes at home, taking with them a colourful and vibrant memory of St Lucia.
The cookery classes take place weekly on Saturday morning. The course costs US$50 per person (approx. £31) which includes a visit to Castries market, a morning cookery class with Executive Chef Craig Jones, and lunch at The Cliff at Cap. Full recipes will also be provided.
Tisane Trail Sessions
Cap Maison is also now offering a complimentary tea making trail. Under the guidance of head gardener Alexis, Cap Maison provides guests with the chance to make their own teas using a selection of ingredients from the extensive herb & plant garden. Alexis advises on the healing and health benefits of the different herbs from peppermint, thyme and basil to lesser known, more exotic herbs such as Noni-Noni. These teas can then be used during the stay at Cap Maison.
