Hotel Icon welcomes Dim Sum master chef for residency

Award-winning Hotel ICON, Hong Kong is set to welcome world Dim Sum master chef Qui Wei Guo for a residency, 2-15 July. During his stay, the acclaimed Cantonese chef from Guangzhou’s White Swan Hotel will personally prepare a Dim Sum menu for Above & Beyond, the 28th floor restaurant at Hotel ICON that commands panoramic views of Victoria Harbour. Guests can savour the menu in the afternoons with individual dim sum costing from £3.20 per dish.

Ranked among the ‘Ten Outstanding Chefs in Guangdong, Hong Kong and Macau’, Chef de Cuisine of White Swan Hotel, Qui Wei Guo and his team are used to serving high profile guests including heads of State and royalty, and have created a mouth-watering menu especially for Above & Beyond at Hotel ICON to reflect the heritage of dim sum and express its authentic and delicate tastes and aromas.

Using the philosophy of traditional GuanXi dim sum, Chef Qui adds his own innovative touches, turning the local specialty into 12 delicious dim sum delicacies including Baked Chicken’s Liver Puff (£4.20), Steamed Duck’s Feet with Abalone (£3.20), Baked Cake of Duck Brain with Sesame (£3.20) and Steamed Beef Meat Ball (£3.20). As a final complement, Chef Qiu offers Deep-fried Bananas (£3.20), each one filled with a red bean paste then fried until crisp and golden.

Dim sum originated in southern China and Cantonese chef Guo embraces both the centuries’ old traditions of the cuisine and contemporary tastes to create tantalising soups and dumpling dishes, delightful cakes and succulent steamed meat balls.
