A taste of spring at Copthorne Hotel Sheffield

Sheffield diners can look forward to a taste of spring on the menu at the 18Fifty5 restaurant at the Copthorne Hotel Sheffield.

Ernst Van Zyl, the recently appointed Head Chef, has created a seasonal menu reflecting the Copthorne’s award winning 18Fifty5 restaurant’s reputation for culinary flair at reasonable prices.

Starters on the new spring menu include pan-fried smoked breast of wood pigeon with beetroot sponge, mini pie of confit leg & watercress; a consommé of spring vegetables with flat leaf parsley & truffle oil and seared king scallops with pressed terrine of pork, celeriac & a caper & lemon confit salsa.

To follow, main courses include grilled fillet of seabass with a lobster & spring onion risotto, baby gem lettuce & a lobster & basil sauce; ragout of turnip & oyster mushrooms with a gruyere beignet and tournedos of beef with chicken liver parfait, toasted homemade horseradish & black truffle brioche with red wine jus.

The delicious menu is completed with a selection of deserts including baked malva pudding with soaked dried apricots, rooibos tea sorbet & a ginger gel; roasted pear with coriander seed crème brûlée, goats milk ice cream & muscovado & rum jelly and bitter chocolate fondant with a cumin caramel centre, pistachio brittle & frozen cardamom yoghurt.

With more than a decade’s hospitality experience, South African born Ernst has worked in the kitchens of many high profile AA Rosetted restaurants, including the five star Hilton Hotel on Park Lane, London. He joins the Copthorne from Prima Hotels, where he was the executive chef for six hotels across the UK.

Ernst said; “I’ve been looking forward to putting my stamp on a new menu and have been monitoring what works well since I began at the Copthorne earlier this year. The new dishes I’ve created for the spring menu show my passion for fresh, high quality ingredients and interesting flavour combinations.

“We like to produce plates of great looking food, but still at an affordable price. 18Fifty5 has developed a loyal customer base now so it’s important we keep standards high and guests coming back for more.”
