New chef on the menu at a five star Durham restaurant

Gadds Town House, a five star restaurant in Durham City has added a new Head Chef to their menu.
Bill Barber, 25, from Trimdon, has been appointed as Head Chef at the popular grill restaurant located in Gadds Town House on Old Elvet in Durham City.
Formerly an employee at The Honest Lawyer, Radisson Blu and most recently Solberge Hall in Northallerton, Bill started his career closer to home at the Dun Cow in Sedgefield. After starting out as a pot washer about ten years ago, an opportunity arose to support the kitchen staff and Bill has never looked back.
Bill even cooked fish and chips for George Bush, when the former American President visited the constituency of Tony Blair in 2003.
"I have had my eye on this restaurant for a while as it offers something different in Durham. It is a unique restaurant in a unique location which already offers quality food, much of which is already locally sourced", said Bill Barber. "I am hoping to offer our customers a quality dining experience. Providing a real sense of occasion when eating out, not just reproducing meals that can easily be cooked at home, is what I like to do. I like my customers to be surprised as well as thoroughly satisfied".
Keen to develop his skills and experience in the kitchen Bill has learnt his trade on the job taking NVQ 1,2,3 in Catering & Hospitality and Catering and Supervision. As a young chef Bill also arranged his own ‘stage’ training and experience, working in the restaurants of Michelin starred chef's Michel Roux jnr. and Raymond Blanc at Le Gavroche and Le Manoir to enhance his learning and develop his own style.
Bill has already influenced the new menu at Gadds Restaurant which as well as steaks also now offers lobster, oysters with a full range of options from breakfast right through to evening dinner.
The 'Grill@Gadds Town House' kitchen team include: Lee Holden, Kevin Dunn and Christian Walker.
"We are very pleased to welcome Bill to the team here at Gadds Restaurant." said Deborah Gadd. “We are very proud of our five star restaurant and know that Bill will be a real asset in our kitchen. He is an extremely talented and exciting young chef and he is very keen to offer a restaurant that is attractive to both residents and visitors. We have great ambitions for Gadds Restaurant and we are certain that Bill is the chef to achieve them and create something new and exciting in Durham.”
