Raw Menu at Michelin starred Texture

Michelin starred restaurant Texture, renowned for its light and often healthy dishes, will introduce a Raw Menu on 27th May.  Despite the comforting qualities of currently trendy junk food offerings, for some the summer commands a more refreshing and revitalising, not to mention wholesome choice in anticipation of the holiday season.

With this in mind, Chef Patron Aggi Sverrisson has drawn on his Scandinavian heritage and skill in using Asian flavours to create a palette pleasing seven-course Raw Menu including dishes such as: Spring Vegetables, pickled, raw, marinated, Ceviche of salmon, cucumber, mooli, bonito broth and Beef tartare, sorrel, balsamic, rocket.

Texture restaurant is owned by Aggi and his business partner, master sommelier Xavier Rousset who met whilst working at Le Manoir aux Quat’Saisons as head chef and head sommelier respectively.  Hailing from Iceland, Aggi’s menu is strongly influenced by his Scandinavian roots and he successfully excludes butter and cream from the majority of his cooking.  Xavier’s eclectic wine list is carefully constructed to allow for plenty of unusual and interesting wine pairings including a wide selection of Riesling and Pinot Noir.

Available for lunch and dinner and priced at £79 per person, the Texture Raw Menu will be on offer until 31st August.  Booking is advisable.
