Soirée De Sabrage At Le Vacherin

The black tie dinner will offer diners a five course feast accompanied by perfectly matched wine and champagne. There will also be demonstrations of Sabrage at intervals throughout the evening when a selection of customers will be invited to become a Sabreur or Sabreuse.
In association with the Confrerie de Sabre D’Or, Chef Patron Malcolm John has created an evening of fantastic food, flowing wine and celebratory atmosphere. Priced at £70 per person inclusive, the Sabrage Diner at Le Vacherin is a great introduction to Sabrage or an opportunity for the more experienced Sabreurs to refresh their skills.
The Confrerie de Sabre D’Or is devoted to promoting the act of Sabrage and the enjoyment of champagne. Sabrage is the opening of a bottle of champagne with a sabre by severing the top of the bottle with the sword’s blade. By using a firm wrist, high elbow and swift action on a perfectly chilled bottle of champagne the cork and glass annulus fly away and little of the champagne is spilt.
Customers taking part in the Sabrage at Le Vacherin will be overseen by a Maître-Sabreur to make sure safety is observed and that the cork flies away from spectators. The pressure of the Champagne always ensures that no glass falls back into the bottle.
Sabrage originates from cavalry officers in the French Army in the 1800’s when they found it easier to use their sword to open the bottle rather than the conventional method. The Confrerie de Sabre D’Or was founded in France in 1986 to continue the tradition and, of course, to enjoy champagne.
Le Vacherin prides itself on serving classic French dishes with French wines and is keen to regularly promote Sabrage events so that diners can learn a little about champagne and Sabrage while enjoying a delicious meal.
