An evening with Michael Caines at Fifteen Cornwall

Michael will be swapping his own kitchen at the celebrated Gidleigh Park to join Fifteen Cornwall’s own Executive Chef, Neil Haydock and his team of professional and apprentice chefs, to produce three of the six courses served on the special dinner menu.
Sharing Fifteen Cornwall’s passion for using locally sourced ingredients, Michael will bring his trademark French-style dishes to the menu, which will include Terrine of winter vegetables with a truffle vinaigrette starter, a main course of honey roast Cornish duckling with cabbage and bacon, served with roasted celeriac and garlic and a chocolate orange confit mousse dessert.
Michael’s courses will be complimented by Fifteen Cornwall’s Italian influenced dishes, which will include risotto of aged carnaroli rice, Cornish lobster with spianata di Calabria pangratatta (fried spicy breadcrumbs) and Cornish Blue cheese and walnut ice-cream with Italian Conference pear and walnut tuile.
Michael and Neil will compere the evening, taking diners through each of the dishes as they are served.
The unique dinner menu is priced at £50 per person with an optional wine tasting package tailored to the menu by Fifteen Cornwall’s own sommelier at £40 per person.
Speaking ahead of his guest appearance at Fifteen Cornwall Michael Caines said: “Over the last year, we at Gidleigh Park have taken students from both Fifteen Cornwall and Fifteen London, and what really moved me was their dedication to make catering work for them. So, when I was asked to work with Fifteen Cornwall for this event I did not hesitate to accept, as I like to inspire young people into the industry, as does Fifteen.”
