Whitmuir to open state of the art green restaurant

Whitmuir the Organic Place, near West Linton in the Scottish Borders, has opened a state of the art organic restaurant, farm shop and gallery.

The new development, which opened for the first time on Saturday the 5th of December is eco-friendly and carbon neutral with solar and PV panels providing hot water and heating and a wind turbine providing electricity.

The builders used low carbon concrete, local larch and sheep’s wool insulation to make the green building climate friendly.

“Our aim was to make the new development as carbon positive as possible however we also wanted to ensure that it looked beautiful. Hopefully we’ve achieved that” said Pete Ritchie, Farm Owner.

Didier Nemesien, Whitmuir’s recently appointed French chef will be using fresh, organic ingredients from the farm and home-grown meat to cook up a selection of tasty and healthy dishes.

Didier, who is Academy-trained, has over twenty year’s experience of serving up food all over the world and is looking forward to cooking in the Scottish Borders.
