The Glorious Twelfth at Theo Randall at The Intercontinental Park Lane
Theo Randall at The InterContinental located at InterContinental London Park Lane, now has grouse back on its menu, using the kitchen’s wood-fired oven to offer an Italian take on roast grouse. Alongside, Theo continues to serve the rustic, Italian dishes he has become renowned for, adapting each day’s menus to reflect the best available ingredients.
Theo’s grouse dish will be stuffed with thyme and roasted, before being served with fresh porcini. One of very few restaurants in London with a wood-fired oven, Theo has developed a number of other roasted specialities, including piccione al forno – Anjou pigeon marinated and wood roasted on pagnotta bruschetta with pancetta and slow cooked peas (£29); and rombo al forno – wood roasted turbot tranche with capers, parsley, Swiss chard and roasted red and yellow peppers (£33).
The grouse dish exemplifies Theo’s produce-driven approach to cooking, honed in kitchens including the River Café and California’s Chez Panisse. Menus are developed daily, and follow the Italian principle of creating simple dishes with fantastic ingredients – Theo has spent a lot of time in Italy, eating everywhere from Michelin starred restaurants to simple trattorias, and seeks to recreate the quality of the dishes he has found there. He’s especially proud of his authentic pasta dishes, particularly the cappelletti stuffed with slow cooked veal and pancetta, which has been a fixture on the menu since the restaurant opened.
A lunch menu is available, priced at £27 for two courses, and there’s also a tasting menu at £65.
Alongside the seasonal menus is an extensive wine list, which has been compiled to complement the cuisine, including a wide selection of wines from around Italy. To accompany the grouse, Theo particularly recommends Barolo, Poderi Aldo Conterno, 2004.
Theo Randall at The InterContinental offers a spacious, stylish dining room as well as a 20-seater bar area where solo diners will find a convivial atmosphere if eating alone. A private dining room for up to 24 is available, in which Theo also hosts cookery classes, on the first Saturday of each month.
