Induction hobs use electro magnetic fields, accompanied by pans that must be ‘ferromagnetic’ such as enamelled steel, cast iron or magnetic stainless steel. When pans are placed on the hob, a magnetic field is generated to produce heat. The field is generated where the pan lies, so induction cooking is very efficient and saves electricity. It is as quick and as controllable as gas. Once removed from the heat the hob surface cools down instantly, providing a safe and controlled solution to cooking.
